Honey Butter Tenderlion
Ingredients:
- butter - 4 t
- honey - 2 t
- pork tenderlion, trimmed - 1 1/2 pounds
- Cajun seasoning - 1/2 t
- fresh ground black pepper - 1/2 t
- water - 3/4 cup
Instructions:
Sprinkle Cajun seasoning and pepper over tenderloin. Melt honey and butter in a dutch oven on medium heat, brown each side of tenderloin for 5 minutes. (Lower heat if honey begins to burn.) Place pot in oven, roast uncovered in a preheated 375 degree oven for 15 - 20 minutes.
Remove from oven and place pork on serving plate; cover with foil. Add water to the pot, stir over medium heat. Simmer for 5 minutes, until sauce is reduced slightly. Slice pork diagonally and drizzle sauce over top; serve.
