Honey Garlic Loin Chops
Ingredients:
- center loin pork chops, well trimmed - 6
- flour - 1 cup
- salt - 2 t
- black pepper - 2 t
- ginger - 1 1/2 T
- nutmeg - 1 T
- thyme - 1 t
- sage - 1 t
- paprika - 1 T
- cayenne pepper - 1/2 t
- eggs - 2
- water - 1/4 cup
- olive oil - 2 T
- mined garlic - 3 - 4 cloves
- honey - 1 cup
- soy sauce - 1/4 t
- black pepper - 1 t
Instructions:
In a bowl sift together flour, salt, black pepper, ground ginger, nutmeg, thyme, sage, paprika and cayenne pepper. (You will have extra flour spice mixture. Store leftover mix in a sealed container in the freezer to use at a later date.)
Whisk eggs and water together. Season chops with salt and pepper, dip meat in the flour spice mixture, then into the eggwash and back into the flour spice mixture, press the mix into the meat.
In a skillet add a half inch of canola oil. Fry chops on medium heat for 4 - 5 minutes per side until golden brown and crispy. Drain on a wire rack, dip the chops into the Honey Garlic Sauce, (recipe fallows). Serve with noodles, rice, etc.
Prepare honey garlic sauce - in a saucepan add 2 T olive oil and minced garlic. Cook over medium heat to soften the garlic DO NOT let it brown, add honey, soy sauce and black pepper. Simmer for 5-10 minutes, remove from heat, cool for a few minutes. (Watch carefully as it simmers because it can foam up over the pot.)
