Island Pork
Ingredients:
- salt - 2 tsp
- pepper - 1/2 tsp
- cumin - 1 tsp
- chili powder - 1 tsp
- cinnamon - 1 tsp
- 2 pork tenderloins, trimmed - 2 1/4 - 2 1/2 pounds total
- olive oil - 2 T
- packed dark brown sugar - 3/4 cup
- finely chopped garlic - 2 T
- Tabasco - 1 T
Instructions:
In a small bowl, combine salt, pepper, cumin, chili powder and cinnamon. Rub mixture over pork.
Heat 2 T olive oil in a cast iron skillet over medium high heat. Add pork, brown all sides. Remove skillet from heat.
In a small bowl, combine brown sugar, garlic and Tabasco, pat mixture on top of pork. Place skillet in a preheated 350 degree oven. Roast until thermometer reads 140 degrees about 20 minutes.
Remove from oven, cover loosely with foil for 10 minutes. Slice and serve.
