10 pound smoked ham with rind
1 c unsweetened apple juice
1/2 c Dijon mustard
2/3 c packed brown sugar
1/4 c honey
Preheat oven to 325 degrees. Place ham in roasting pan and pour juice over ham. Cover ham with heavy-duty foil, sealing edges of pan. Bake ham until center of ham reaches 145 degrees. Remove ham from oven, remove foil and discard liquids from pan. Increase oven temperature to 375 degrees.
Cut off rind and leave a 1/4 inch layer of fat. With a knife, score fat in a diamond pattern, 1/4-inch-deep. Spread mustard evenly over fat layer on ham. Press brown sugar over mustard. Drizzle honey over ham. Bake at 375 degrees until ham is well glazed. Spoon mustard and sugar glaze that slides off ham, back onto the ham, about 30 minutes. Transfer ham to serving platter; let rest 15-20 minutes.
