No Bake Oatmeal Bars
Ingredients:
- butter - 1 cup
- packed brown sugar - 1/2 cup
- vanilla extract - 1 tsp
- quick cooking oats - 3 cups
- semisweet chocolate chips - 1 cup
- peanut butter - 1/2 cup
Instructions:
In large saucepan over medium heat, melt the butter. Stir in brown sugar and vanilla, mix in the oats. Cook over low heat 2 - 3 minutes, or until ingredients are blended. Press half of mixture into the bottom of a greased 9 x 9 inch baking pan. Set aside the other half for topping.
In a small pan, melt together chocolate chips and peanut butter over low heat, stirring frequently until smooth. Spread chocolate evenly over the crust.
Crumble remaining oat mixture over the chocolate layer, pressing in gently. Cover, place in refrigerator for 2 - 3 hours. Bring to room temperature before cutting into bars.
