Parmesan Meatloaf
Ingredients:
- ground turkey - 1 pound
- ground beef - 1 pound
- eggs - 2
- breadcrumbs - 1/4 cup
- dried basil - 1/2 tsp
- dried thyme - 1/2 tsp
- dried oregano - 1/2 tsp
- garlic, finely minced - 1 -2 cloves
- onion, grated - 1 small
- salt - 1/2 tsp
- black pepper - 1/4 tsp
- grated Parmesan cheese - 1/2 cup
- marinara pasta sauce - 1/2 cup
- shredded Italian cheese blend - 1/2 cup
- minced parsley - garnish
Instructions:
In a bowl, combine turkey, beef, eggs, breadcrumbs, thyme, oregano, basil, garlic, onion, salt, pepper and Parmesan cheese. DO NOT over handle the mixture otherwise it will get tough. Place mixture in a greased loaf pan, form into a loaf. Spread pasta sauce over the top.
Place pan on a baking sheet. Bake in a preheated 350 degree oven for 45 minutes - 1 hour. Remove the meatloaf from the oven, sprinkle Italian cheese over top. Return meatloaf to the oven, bake until the cheese is melted.
Remove from oven, garnish with parsley. Let meatloaf rest for 5 - 10 minutes before slicing.
