Pepper Crusted Steak
Ingredients:
- whole black peppercorns - 1 T
- whole green peppercorns - 1 T
- butter, room temperature - 2 T
- filet mignon steaks (1 1/2 inches thick) - 4 - 6 ounce
- kosher salt -
- olive oil - 2 T
Instructions:
Place peppercorns in a zip lock bag and crack them with a mallet until into small pieces but not pulverized. In a bowl, mix together the peppercorns and butter.
Season steaks generously with salt. Rub peppercorn butter evenly on both sides of the steaks. Heat the oil in a frying pan over medium high heat until shimmering, about 3 minutes. Add the steaks, cook undisturbed to desired doneness, about 4 minutes per side for medium rare. Place on serving plate and let steaks rest for 5 minutes before serving.
