Pork Chops with Honey Garlic Sauce
Ingredients:
- center cut loin pork chops, well trimmed - 6
- flour - 1 cup
- salt - 2 t
- black pepper - 2 t
- ginger - 1 1/2 T
- nutmeg - 1 T
- thyme - 1 t
- sage - 1 t
- paprika - 1 T
- cayenne pepper - 1/2 t
- eggs - 2
- water - 4 T
- garlic, minced - 3 - 4 cloves
- olive oil - 2 T
- honey - 1 cup
- soy sauce - 1/4cup
- pepper - 1 t
- canola oil - for frying
Instructions:
Prepare egg wash -- in a bowl whisk together eggs and 4 T water.
In a bowl mix together flour, ginger, nutmeg, thyme, sage, paprika and cayenne pepper. Salt and pepper the pork chops, dip chops in flour mixture, then into the egg wash and back into the flour mixture, press the mix into the chop.
Pour a half inch of canola oil in a skillet, heat on medium low, fry for 4 - 5 minutes per side until golden brown and crispy.
Drain on a wire rack for a couple of minutes before dipping the cooked chops into the Honey Garlic Sauce. Serve with noodles or rice.
Honey Garlic Sauce - In a saucepan, on medium heat soften 3 - 4 cloves minced garlic in 2 T olive oil. DO NOT LET IT BROWN. Add 1 c honey, 1/4 c soy sauce and 1 t pepper. Simmer for 5 - 10 minutes, remove from heat and cool for a few minutes. Watch carefully because it can easily foam over the pan.
