3-4 pound pork shoulder roast
1 T sugar per pound of meat
1 T kosher salt per pound of meat
coarse black pepper as desired
Mix seasonings together and rub into roast. Cover and refrigerate overnight.
Place in pan and bake at 250 degrees for 6-7 hours. Let rest 30 minutes, then pull apart with 2 forks.
Serve on buns with your favorite bbq sauce.
