Roasted Garlic Butter
Ingredients:
- garlic, papery skins removed and about 1/2-inch cut off the top to expose cloves - 1 whole head
- olive oil - 1 t
- butter with olive oil and sea salt, at room temperature - 8 T
- clove garlic, minced - 1 large
- minced fresh parsley - 1 T
- freshly ground black pepper to taste -
Instructions:
Place head of garlic on foil and drizzle with olive oil. Wrap tightly, bake in a preheated 400 degree oven for 30 - 35 minutes or until the cloves feel soft to the touch. Remove from oven and cool. Press each clove into a bowl, smash with a fork. Add butter, minced garlic, parsley and black pepper and stir to combine. Scrape butter onto a sheet of foil. Roll into a log, then twist the ends closed. Place in refrigerator until firm enough to slice. Cut into slices and lay on top of grill steaks or serve at room temperature as a spread for bread (French, Italian, etc).
