Sirloin with Lemon Pesto
Ingredients:
- sirloin - 1 pound
- fresh parsley - 1/2 cup
- fresh chives - 3/4 cup
- pine nuts - 2 T
- garlic - 1 small clove
- fresh squeezed lemon juice - 1/4 cup
- extra virgin olive oil - 3 T
- salt and fresh ground black pepper - to desired taste
Instructions:
Place pine nuts on a parchment lined baking sheet, toast in a preheated 375 degree oven for about 5 minutes, or until they become light golden. They will burn quickly.
Prepare pesto - in a food processor, combine parsley, chives, toasted pine nuts, garlic, lemon juice, salt and pepper. Pulse until a thick paste is formed. Add olive oil and pulse until well combined.
Heat grill for medium heat. Season steaks with salt and pepper. Place steaks on the grill, cook, untouched, for about 7 minutes. Flip steaks over, grill second side for about 7 minutes more, or until a meat thermometer inserted into the very center of the steak reads 145 degrees F (for a medium rare steak).
Place steaks on serving platter, cover, let sit for five minutes. Top steaks with pesto; serve.
