Sirloin with Red Wine Sauce
Ingredients:
- Certified Angus sirloin filet, cut 1 1/4 - 1 1/2 inches thick - 4
- olive oil - 1 T
- fine chopped fresh rosemary, divided - 2 T
- cracked peppercorn blend - 2 T
- kosher salt - 2 t
- diced shallots - 1/4 cup
- garlic, minced - 4 cloves
- cabernet sauvignon (red wine) - 1 cup
- Dijon mustard - 1 T
- butter - 2 T
- chopped parsley - 3 T
- salt and pepper - to desired taste
Instructions:
Heat oil in a cast iron skillet over medium high heat. Combine 1 T rosemary, peppercorn and salt, lightly press mixture into steak. Sear steaks 1 - 2 minutes on each side. Place in a preheated 350 degree oven for 5 - 10 minutes for medium rare or until steaks reach desired doneness. Place steaks on serving platter, cover and let steaks rest 5 minutes before serving.
In the same skillet, add shallots and garlic; cook for 2 minutes on medium heat. Whisk in wine and mustard; reduce by 2/3. Add 1 T rosemary, add butter swirl skillet to melt. Remove from heat; add parsley, season with salt to desired taste. Serve over steaks.
