Sloppy Joe Stuffed Peppers
Ingredients:
- bell peppers (yellow, red, orange or green) - 3
- lean ground beef - 1 pound
- Sloppy Joe sauce - 1 can
- salt and pepper - to desired taste
- colby jack or cheddar cheese - 6 slices
- parsley or green onion, chopped - garnish
- brown rice, cooked -
Instructions:
Cut around the stem of each pepper, remove, discard. Slice pepper in half, remove leftover seeds and membrane. In a skillet, over medium-high heat, crumble and brown ground beef. Drain off any excess liquid. Add Sloppy Joe sauce, cook for 2 minutes, cover and reduce heat to low.
Coat a large, oven-safe dish with nonstick cooking spray. Place peppers in the pan, cut side up. Bake in a preheated 350 degree oven for 10 - 15 minutes, or until slightly softened.
Divide meat evenly among the pepper halves. Return dish to the oven for 15 minutes.
Top each pepper half with a slice of cheese, return to oven for 5 minutes or until cheese has completely melted.
Garnish with parsley or green onion; serve with brown rice.
