Slow Cooker Pepper Roast
Ingredients:
- beef roast, cut in strips - 2 pound
- garlic powder -
- vegetable oil - 2 T
- beef broth - 1/4 cup
- cornstarch - 1 T
- onion, roughy chopped - 1
- bell peppers, roughly chopped - 2
- stewed tomatoes with liquid - 14 ounce can
- soy sauce - 3 T
- sugar - 1 t
- salt - 1 t
Instructions:
Season beef with garlic powder and heat oil in a skillet brown meat. Place meat in slow cooker. Mix cornstarch and beef broth in skillet, heat over low heat stir until dissolved, pour over meat. Place remaining ingredients over meat, cook on low for about 8 hours. If sauce looks too thin after 8 hours, remove 1/4 cup sauce and blend with 1 tablespoon of cornstarch, pour over meat to thicken sauce. Serve over rice.
