Smothered Pork Chops
Ingredients:
- lean, pork loin or boneless chops - 10 ounces
- bacon, coarsely chopped - 2 ounces
- olion, slivered into long strips - 1
- mushrooms, sliced - 4 large
- pork or chicken broth - 1 cup
- heavy cream - 2 ounces
- white wine - 1 ounce
- salt and pepper - to desired taste
Instructions:
In a non stick skillet over high heat, brown bacon. Add onion and salt; saute, to soften and caramelize in the bacon drippings. Add mushrooms and saute just until no longer white. Place mushroom mixture on a plate; set aside. In the same skillet brown meat on both sides, (will only be half cooked at this point). Add mushroom mixture, chicken broth, wine and pepper to skillet.
Cover, bake in a preheated 350 degree oven for 30 minutes to finish cooking and for the meat to get tender. Remove from oven, place meat on serving platter, cover. Heat skillet on low heat. Add cream and simmer a few minutes to slightly thicken up. (If needed thicken with a little flour). To serve, spoon sauce over each portion.
