Smothered Pork Chops
Ingredients:
- pork chops - 4 - 6
- salt and pepper - to desired taste
- granulated garlic - 1/2 t
- dried oregano - 1/2 t
- vegetable oil - 3 T
- onion, halved, sliced - 1 large
- flour - 3 T
- chicken broth - 14 ounce can
Instructions:
Season both sides of pork chops with salt, pepper, garlic and oregano. In a skillet, heat oil on medium high heat until hot. Sear chops in hot pan for 3 minutes on each side, until nicely browned. Remove chops from pan, place on a plate. Add onions to hot pan, season with salt and pepper and saute for 2 minutes. Reduce heat to medium, add flour. Stir to coat onions with flour, continue cooking for 2-3 minutes, stir occasionally. Slowly add chicken broth and stir until smooth and mixture begins to thicken. Add salt and pepper to desired taste. Reduce heat to low, place chops in pan, cover and SIMMER for 30 - 60 minutes. The longer the chops cook, the more tender they will be.
Serve gravy over pork chops and noodles or rice or mashed potatoes.
