Steak Tidbits
Ingredients:
- sirloin steak (without much gristle) - 1 pound
- Kosher salt - to desired taste
- fresh ground black pepper - to desired taste
- butter - 2 T
Instructions:
Trim fat from the meat, cut into 1 inch squares. Sprinkle meat generously with salt and pepper. Toss meat to thoroughly coat with the seasonings.
Turn on stove exhaust fan. (Pan will get smoky) Heat skillet over medium high to high heat, add 2 T butter to the skillet, let butter melt and brown, before you add the meat.
Place some of the meat in the pan in a single layer. It should sizzle loudly when it hits the pan – if it doesn’t, the pan isn’t hot enough. DO NOT stir the meat for 30 - 45 seconds. You want it to sizzle and brown on one side. Flip meat over, cook for 30 - 45 seconds for the outside of the meat to sear, but NOT cooked inside.
Remove meat to serving bowl. Place additional butter in the skillet, repeat the process until all the meat is seared. Pour all browned/blackened butter over the meat. Enjoy!!!!!
