Sweet and Spicy Pork Tenderloin
Ingredients:
- oil - 2 T
- tenderlions or any cut - 8 ounces
- salt and pepper - to desired taste
- smoked paprika - 1 t
- ketchup OR BBQ sauce - 1/3 cup
- Sriracha - 4 T - to desired taste
- sugar - 1 T
- black pepper - 1/2 - 1 t
- soy sauce - 1 t - to desired taste
- ground ginger - 1 t
- onion powder - 1 T
- garlic powder - 1 T
- fresh squeezed lemon juice - 1 T
Instructions:
Cut meat into strips, rub with salt, pepper and paprika. In a skillet, heat oil on medium high, fry meat until no longer pink and looks crunchy on the ends.
While meat is cooking, prepare sauce -- in a bowl, stir together ketchup, Sriracha, sugar, pepper,soy sauce, ginger, onion powder, garlic powder and lemon juice.
When the meat is done, remove half of the oil and pour the sauce over the meat and stir to get sauce on all sides of the meat. Continue cooking for 7 minutes on medium high. When sauce thickens it is done.
Serve on a bun, over rice, potatoes, noodles, etc.
