Apple Muffins
Ingredients:
- margarine - 2 T
- brown sugar - 1/3 cup
- flour - 1 T
- cinnamon - 1/2 t
- nutmeg - 1/4 t
- finely chopped apples, peeled - 2 cups
- chopped nuts (pecans or walnuts) - 1/2 cup
- margarine, softened - 3/4 cup
- sugar - 1 1/2 cups
- eggs - 3
- vanilla extract - 1 1/2 t
- flour - 3 1/2 cups
- baking powder - 1 1/2 t
- baking soda - 1 1/2 t
- salt - 3/4 t
- sour cream - 1 1/2 cups (12 ounces)
- cinnamon sugar -
Instructions:
Prepare apple filling -- in saucepan melt 2 T margarine, stir in brown sugar, 1 T flour, cinnamon and nutmeg until smooth. Add apples; cook on medium low heat for 10 minutes until apples are tender, stirring frequently. Remove from heat; stir in nuts. Set aside to cool.
Prepare muffins -- in a bowl, cream together 3/4 cup margarine and sugar. Add eggs, one at a time beating after each, beat in vanilla. In a bowl, combine 3 1/2 cups flour, baking powder, baking soda and salt. Add dry ingredients to the creamed mixture alternating with the sour cream.
Fill 2 dozen muffin cups half full with batter. Add a rounded teaspoonful of apple filling in the center of each muffin. Top with remaining batter. Sprinkle cinnamon sugar over top of muffins.
Bake in a preheated 350 degree oven for 16 minutes or until muffins test done.
