Mocha Muffins
Ingredients:
- wheat bran - 1 cup
- whole wheat flour - 1 cup
- sugar - 1/2 cup
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- cinnamon - 1/2 tsp
- Kosher salt - pinch
- unsweetened applesauce - 1/2 cup
- buttermilk - 1/2 cup
- olive oil - 1/4 cup
- egg - 1
- instant expresso powder - 2 tsp
- mini chocolate chips - 1/4 cup
Instructions:
In a bowl, combine dry ingredients wheat bran, flour, sugar, baking powder, soda, cinnamon and salt.
In a second bowl, combine applesauce, buttermilk, oil, and egg; stir in espresso powder. Add flour mixture; mix to combine. Fold in the chocolate chips.
Divide batter among 10 lined muffin cups or 24 mini muffins.
Bake in a preheated 350 degree oven for 20 -22 minutes, until a wooden pick inserted in the middle comes out clean. Cool muffins in the pan for 5 minutes, remove, place on wire rack to completely cool. Mini muffins, bake at 350 degrees for 14 - 16 minutes.
