Raisin Bran Muffins
Ingredients:
- flour - 1 1/2 cups
- wheat bran - 1 cup
- pumpkin pie spice - 2 tsp
- baking soda - 1 tsp
- Kosher salt - 1/8 tsp
- buttermilk - 1 cup
- egg - 1
- unsweetened applesauce - 1/4 cup
- molasses - 1/4 cup
- sugar - 1/4 cup
- canola oil - 1 T
- vanilla extract - 1 tsp
- raisins - 3/4 cup
Instructions:
In a large bowl, whisk together flour, wheat bran, pumpkin pie spice, baking soda and salt.
In a second bowl, whisk together buttermilk, egg, applesauce, molasses, sugar, oil and vanilla. Add buttermilk mixture to the flour mixture, stir until just incorporated; fold in the raisins.
Divide batter between 12 paper lined muffin cups. Bake in a preheated 350 degree oven for 25 - 30 minutes until a toothpick inserted in the center comes out clean.
