3 c fresh blueberries
1 c cream
2/3 c sugar
4 T flour
1/4 t salt
1 T orange or lemon zest
1 pastry pie crust
Spread blueberries evenly into unbaked pie crust.
In a bowl whisk together cream, sugar, flour, salt and zest; carefully pour over blueberries.
Bake at 400 degrees for 35-42 minutes or until light golden brown on the top.
Cool, place in refrigerator, serve cold.
