Candy Bar Ice Cream Pie with Caramel Sauce
Ingredients:
- graham crackers, crushed - 4 whole
- butter, melted - 1/3 cup
- vanilla ice cream - 2 pints
- finely chopped pecans - 1/4 cup plus more for garnish
- Peanut Butter Cup candy bars, roughly chopped - 4
- Butterfinger candy bars, roughly chopped - 2
- packed brown sugar - 1 cup
- half and half - 1/2 cup
- butter - 4 T
- salt - pinch
- vanilla - 1 T
Instructions:
Combine crumbs and butter, press into a 9 inch pie pan. Bake in a preheated 350 degree oven for 5 minutes until golden and set. Remove, completely cool.
For filling -- slightly soften ice cream, stir in pecans and candy bars, cover, place in freezer until firm.
Prepare caramel sauce -- In a saucepan over medium low heat combine brown sugar, half and half, butter and salt, gently whisk until sauce has thicken some. Add vanilla continue cooking another minute until sauce thickens. Pour into a jar, cover and place in refrigerator until cold.
To serve -- Place slices of pie on individual serving plates, spoon caramel sauce over top, garnish with pecans. Serve extra sauce on the side.
