Caribbean Fudge Pie
Ingredients:
- margarine, softened - 1/4 cup
- packed brown sugar - 3/4 cup
- eggs - 3
- Bakers semi sweet chocolate, melted - 1 package (8 squares)
- instant coffee - 2 t
- rum extract - 1 t
- flour - 1/4 cup
- chopped walnuts - 1 cup
- unbaked pie shell - 1 - 9 inch
- walnut halves - 1/2 cup
Instructions:
In a bowl, beat margarine and sugar until light and fluffly. Add eggs one at a time, beat after each addition. Add chocolate, coffee crystals and rum extract; mix well. Stir in flour and chopped walnuts. Pour into pie shell, garnish top with walnut halves.
Bake in the lower third of preheated 375 degree oven for 25 minutes. Cool on wire rack. Place in refrigerator for 1 hour or until ready to serve.
