Chocolate Almond Pie
Ingredients:
- pie crust - 1 - 9 inch
- sliced almonds - 2 1/2 cups
- salt - 1 tsp
- cinnamon - 1 tsp
- butter - 3/4 cup
- sugar - 3/4 cup
- eggs - 2
- egg yolks - 2
- high quality semisweet chocolate chips - 12 ounce package
- heavy cream - 1/2 cup
- sliced almonds - 1/4 cup
Instructions:
Poke crust a few times with a fork. Bake in a preheated 400 degree oven for 6 minutes. Remove from oven; set aside. Reduce oven temperature 350 degrees.
In a food processor, finely grind 2 1/2 cups almonds.
In a bowl, beat butter and sugar together until it becomes lighter. Add ground almonds, salt and cinnamon; mix. Add eggs and egg yolks one at a time until each is incorporated. Spread 3/4 cup chocolate chips evenly in the bottom pie crust. Evenly spoon almond mixture over chips; smooth the top. Bake in preheated 350 degree oven for 40 minutes or until almond mixture has set. Place on cooling rack and completely cool.
In a pan, heat cream just to a simmer. Place remaining chocolate chips in a bowl. Pour hot cream over the chips, mix until smooth.
Spread chocolate mixture evenly over the top of the pie. Lightly tap the pie on the counter 2 -3 times to remove any air bubbles.
Sprinkle 1/4 cup sliced almonds over top, place in refrigerator for 2 hours before serving.
