Chocolate Buttermilk Pie
Ingredients:
- unbaked pie crust - 2 - 9 inch
- butter, room temperature - 1 c
- sugar - 3 3/4 c
- flour - 1/2 c
- cocoa powder - 1/3 c
- eggs - 6
- salt - 1/4 t
- vanilla extract - 1 1/2 t
- buttermilk - 1 c plus 2 ounces
Instructions:
In a bowl combine sugar and butter and mix until well blended. Beat in eggs, mix well. In another bowl whisk together flour, cocoa and salt, add to the butter mixture; mix. Add buttermilk and vanilla to the mixture, stir until well mixed. Divide filling evenly between the two pie crusts. Bake in preheated 350 degree oven for 45 minutes until firm and does not jiggle in the middle. Completely cool before cutting. Store covered in the refrigerator.
