Chocolate Mocha Pie in a Jar
Ingredients:
- milk - 2 cups
- instant coffee - 3 tsp
- Nilla wafers, crushed - 30
- butter, melted - 3 1/2 T
- chocolate pudding - 2 small boxes
- Cool Whip, thawed - 16 ounces
- semisweet chocolate chips - 1/3 cup
- vanilla whipped topping frosting - for topping
- cocoa powder - for garnish
Instructions:
Heat milk (do not bring to a boil). Dissolve instant coffee in hot milk. Place mixture in refrigerator to cool. In a bowl, mix together wafers and butter. Place 2 T into eight 8 ounce jars. In a bowl whisk together pudding mix and cold milk for 2 minutes, stir in 2 cups Cool Whip. Spoon 1/3 cup pudding mixture into each jar. Place jars in refrigerator for 2 hours or until chocolate is firm.
Prepare glaze -- place chocolate chips and 1 cup Cool Whip into the microwave for 1 minute. Mix well, cool for a couple of minutes, add ½ cup Cool Whip. Spoon 2 T into each jar, spread glaze evenly over pudding layer. Place in refrigerator for 15 minutes or until glaze is firm. Top with a dollop of vanilla whipped topping frosting. Garnish with a sprinkle of cocoa powder. Store in refrigerator.
