Citrus Pie
Ingredients:
- saltine crackers, crushed - 1 1/2 sleeves
- butter, softened - 1/3 - 1/2 cup
- sugar - 3 T
- filling --
- sweetened condensed milk - 14 ounce can
- egg yolks - 4
- lemon or lime juice or combination or both - 1/2 cup
- whipped cream - topping
- sea salt - garnish
Instructions:
Prepare crust - in a bowl mix together cracker crumbs and sugar, knead in the butter until the crumbs hold together like dough. Press dough into an 8 inch pie pan. Place in refrigerator for 15 minutes, remove, bake in a preheated 350 degree oven for 18 minutes or until crust colors a little.
Prepare filling -- in a bowl, beat together egg yolks and milk, add citrus juice, beat. (Completely combine these ingredients.) Pour into pie shell, bake in 350 degree oven for 16 minutes until the filling has set.
Pie needs to be completely cold before slicing. Top with whipped cream, garnish with a sprinkling of sea salt.
