Cranberry Pie
Ingredients:
- whole wheat pastry flour - 1 cup
- oat flour - 1 cup
- sugar - 3/4 cup
- rolled oats - 1/2 cup
- olive oil - 1/4 cup
- coconut oil OR butter, melted - 1/2 cup
- cinnamon - 1 - 2 t
- fresh cranberries - 12 ounces
- orange juice - 4 T
- sugar - 1/4 - 1/2 cup
- cornstarch - 1 T
- cinnamon - 1 t
Instructions:
Prepare crust and topping -- in a bowl, mix together the flours, 3/4 cup sugar, oats, oil, butter and 1 - 2 t cinnamon. Set aside 1 - 1 1/2 cups of the mixture, press the remainder in a 9 inch pie plate.
Prepare filling -- in a bowl, combine cranberries, juice, 1/4 - 1/2 cup sugar, cornstarch and 1 t cinnamon, pour over the crust. Crumble reserved crumb mixture, sprinkle over top.
Bake in a preheated 350 degree oven for 50 - 60 minutes or until top is golden brown.
