Creamy Blueberry Pie
Ingredients:
- blueberries, fresh or if frozen, thaw and drained well - 3 cups
- deep dish pie crust - 9 inch
- sugar - 1 cup
- flour - 1/3 cup
- salt - 1/8 t
- eggs, beaten - 2
- sour cream - 1/2 cup
- sugar - 1/4 cup
- brown sugar - 1/4 cup
- flour - 1/2 cup
- butter - 1/4 cup
Instructions:
Place blueberries in the pastry shell; set aside.
In a bowl combine 1 c sugar, 1/3 c flour and salt, add eggs and sour cream, stir until blended. Carefully pour over the blueberries. In a second bowl, combine 1/2 c sugar and 1/2 c flour, cut butter in with a pastry blender until mixture resembles coarse meal. Sprinkle topping over the sour cream mixture.
Bake in a preheated 350 degree oven for 50 - 55 minutes, or until lightly browned. (Cover pie with foil for the first 20 minutes to prevent streusel from browning to much.) Cool on wire rack.
