Fudge Pecan Pie
Ingredients:
- pie crust, unbaked - 1 - 9 inch
- butter, softened - 1/2 cup
- packed brown sugar - 1/4 cup
- eggs - 3
- chocolate chips, melted - 12 ounce package
- instant coffee granules - 2 t
- vanilla - 1 t
- flour - 1/2 cup
- chopped pecans - 3/4 cup
Instructions:
Place pie crust into pie plate, crimp edges; set aside. In a bowl beat butter until creamy, add brown sugar and beat well. Add eggs one at a time, beating until just blended after each addition. Add chocolate, coffee and vanilla, beat until combined. Stir in flour and pecans. Pour into pie crust. Bake in a preheated 375 degree oven for 25 minutes. Let cool for 2 hours. Cover, place in refrigerator for 8 hours. Garnish with whipped cream before serving.
