1 1/4 c flour
1/2 t salt
1 t sugar
1/2 c unsalted butter, cold and cut into half inch cubes
2 – 4 T cold water
In a bowl whisk together flour, sugar and salt, add butter, mix with pastry cutter to look like coarse meal. Add 1 T water at a time until dough forms. Wrap dough in plastic wrap and place in refrigerator for 2 hours.
Lightly grease 9 inch pie pan. On a floured work surface roll dough into a circle, 1/8 inch thick. Place dough in pie pan, trim edges and crimp edges. Prepare filling —
1 c half and half
¼ c unsalted butter
8 ounces bittersweet chocolate, chopped
1½ c sugar
¾ c cocoa powder
¼ c flour
¼ t salt
2 eggs
3 egg yolks
In a bowl whisk together sugar, cocoa powder, flour and salt. In a saucepan stir together over medium low heat, half and half, butter and chocolate until smooth, cool for a few minutes. Add eggs, egg yolks and chocolate mixture to dry ingredients stir until well combined. Pour mixture into pie pan. Bake in preheated 350 degree oven for 45 – 50 minutes, until center is and edges start to crack. Cool 10 – 15 minutes before serving. If desired serve with ice cream.
