Honey Walnut Pie
Ingredients:
- lightly prebaked pie crust - 1 - 9 inch
- walnuts - 1 1/2 cups
- sugar - 1/2 cup
- honey - 2/3 cup
- salt - 3/4 t
- butter - 8 ounces
- vanilla extract - 1 t
- heavy cream - 1/2 cup
- egg - 1
- egg yolk - 1
- flaked sea salt -
Instructions:
In a dry skillet over mediumm low heat, lightly toast walnuts. Cool, chop and place in lightly bake pie crust.
Prepare honey filling -- in a heavy bottomed pan, stir together sugar, honey and salt. Add butter cook over medium heat, stir constantly until butter has melted and mixture comes just to a boil. Remove from heat, pour mixture in a bowl. Whisk in vanilla, let mixture cool for 20 minutes.
Whisk in cream, add egg and yolk, whisk until well combined. Carefully pour filling over the walnuts. Cover edges of crust with foil to prevent over browning.
Bake in a preheated 350 degree oven for 40 - 50 minutes or until filling is set but jiggles slightly. Sprinkle sea salt over cooled pie. Serve with a dollop of whipped cream or ice cream.
