Kahlua Fudge Ice Cream Pie
Ingredients:
- Oreo cookies, crushed fine - 32
- margarine, melted - 1/4 c
- vanilla ice cream - 1/2 gallon
- Kahlua - 1/3 c
- sugar - 1 c
- evaporated milk - 5 ounce can
- vanilla - 1 t
- semi sweet chocolate - 4 squares
- margarine - 6 T
- Kalua - 4 T
- Cool Whip - 16 ounces
- pecans, lightly toasted - 1 c
Instructions:
Mix crumbs and margarine together and pat into 2 pie tins. Place crusts in the freezer. Beat ice cream with 1/3 c Kahlua (keep at a creamy texture but not runny consistency). Spread evenly on over frozen crusts; return to freezer. Place sugar, milk, vanilla, chocolate squares and margarine in saucepan. Bring to a boil and boil 1 minute; cool. Blend 4 T Kahlua with chocolate sauce. Pour over ice cream. Place in freezer. Spoon Cool Whip over chocolate. Sprinkle toasted pecans on top. Place in freezer. Makes 2 pies.
Variations: Coffee flavored ice cream for vanilla ice cream. Use Amaretto instead of Kahlua. Decrease number of cookies to 28 and make entire recipe in 9 x 13 pan.
