Mint Mini Pie
Ingredients:
- mini graham cracker pie crust - 2 packages
- instant chocolate pudding mix - 3.4 ounce box
- cold whipping cream - 1 cup
- powdered sugar - 1/4 cup
- vanilla extract - 1 t
- Grasshopper cookies OR Thin Mint cookies, crumbled - 18 - 20
Instructions:
Prepare chocolate pudding per package directions. Place in refrigerator.
Prepare whip cream -- in a bowl combine cream, powdered sugar and vanilla, beat on slow speed, slowly increasing speed as cream thickens. Beat until soft peaks form. (DO NOT over beat.) Gently fold half of the whipped cream into the pudding. Spoon pudding into pie crusts to 1/4 inch below the lip of the pie crust. Top pudding with 1 T or more of cookies. Place dollops of whipped cream over the cookies. Place in the refrigerator for 45 minutes before serving. Garnish -- sprinkle cookie crumbs over cream and poke 1/2 of a cookie in the cream.
