Peanut Butter Pie
Ingredients:
- crushed pretzels - 3 cups
- butter, melted - 3/4 cup
- sugar - 1/4 cup
- milk chocolate chips - 1 cup
- peanut butter - 2/3 cup
- cream cheese, softened - 8 ounces
- vanilla extract - 1 tsp
- powdered sugar - 2 cups
- Cool Whip, thawed - 4 cups
- mini Reese's Peanut Butter cups - for garnish
Instructions:
Combine pretzel crumbs, butter and sugar. Press firmly into the bottom and sides of a springform pan. Bake in a preheated 350 degree oven for about 10 minutes, sprinkle chocolate chips over the crust, return to oven for five minutes. Spread melted chocolate chips over the crust. Let cool completely before filling.
Prepare filling -- in a bowl, beat together peanut butter, cream cheese, vanilla and powdered sugar. Whisk in 1/2 cup Cool Whip, gently fold in 1 1/2 cups Cool Whip. Pour filling into the crust. Spread 2 cups Cool Whip over the top. Coarsely chop peanut butter cups, sprinkle around the outside edge of the pie. If desired garnish center of pie with chopped and whole peanut butter cups.
