Peanut Butter Pie
Ingredients:
- pie crust, baked - 1 - 9 inch
- semi sweet chocolate chips - 1 1/3 cups
- cream - 2/3 cup
- corn syrup OR honey - 2 T
- vanilla extract - 1 tsp
- Peanut butter mousse --
- instant vanilla pudding - 1 small box
- cold milk - 1 cup
- creamy peanut butter - 1/2 cup
- Cool Whip, thawed - 8 ounces
- Garnish --
- Reese's mini cups, chopped - 8 - 10
- chocolate, melted - 2 T
Instructions:
Prepare chocolate layer -- melt together chocolate chips, cream, corn syrup and vanilla, stir with a whisk until mixture is smooth and creamy. Pour chocolate into baked pie crust and smooth top. Place in the freezer for 10 minutes.
Prepare peanut butter mousse -- in a bowl, whisk together pudding mix and milk, until smooth. Heat peanut butter in the microwave for 10 seconds to soften, add it to the vanilla pudding. Whisk until smooth and thick. Gently fold in Cool Whip. Pour over chocolate layer and smooth top.
Garnish with Reese's cups and chocolate drizzled over top. Store covered in refrigerator until ready to serve.
