Pecan, Chocolate Chip, Coconut Pie
Ingredients:
- pie crust, store purchased OR your favorite recipe - 1 - 9 inch
- eggs - 3
- light Karo corn syrup - 1 cup
- sugar - 1/3 cup
- packed brown sugar - 1/3 cup
- margarine, melted - 1/3 cup
- vanilla - 1 t
- salt - 1/4 t
- semi sweet chocolate chips - 1 cup
- coconut - 1 cup
- chopped walnuts OR pecans - 1 cup
Instructions:
In a bowl, mix together eggs, corn syrup, sugar, brown sugar, butter, vanilla and salt.
In pie crust, layer chocolate chips, coconut and nuts; evenly spread on egg mixture.
Cover edge of pie crust with foil to prevent overbrowning. Bake in a preheated 350 degree oven for 30 minutes. Remove foil; bake for 20 - 25 minutes more or until set. Cool on wire rack.
Serve with whipped cream or ice cream.
