Raspberry Pie
Ingredients:
- baked pie crust - 1
- dark chocolate chips - 10 ounces
- cream cheese, softened - 8 ounces
- sugar - 3/4 cup
- fresh raspberries - 18 ounces
- raspberry gelatin - 3 ounce package
- water - 1 cup
- cornstarch - 1 T
Instructions:
Melt the chocolate chips, slowly pour chocolate into a bowl containing cream cheese and sugar, blend well. Pour chocolate cheese mixture into pie crust. Cover, place in refrigerator for 2 hours or until chocolate is set.
Spread raspberries over chocolate. Boil water, whisk in cornstarch until it reaches a thin syrup consistency, pour over the gelatin. Whisk together until smooth. Slowly and evenly pour mixture over the raspberries. Place in refrigerator for 2 hours until set. Serve with a dollop of whipped cream.
