Snickerdoodle Pie
Ingredients:
- unbaked pie crust - 1 - 9 inch
- Snickerdoodle Cookies, crumbled into bite size pieces - 12 - 14
- butter, melted NOT margarine - 1/2 cup
- sugar - 1/2 cup
- eggs - 3
- cormeal OR flour - 1 T
- vinegar - 1 T
- vanilla - 1 t
Instructions:
In a bowl, whisk together butter, sugar, eggs, cornmeal, vinegar and vanilla until smooth. Gently fold in the bite size pieces of cookie, just until cookie pieces are coated.
Pour cookie mixture into unbaked pie crust. Smooth top of mixture level.
Bake in a preheated 350 degree oven for 35 - 40 minutes until golden brown on top. Cool for 5 - 10 minutes before serving.
