Streusel Topped Apple Pie Bites
Ingredients:
- crescent roll dough - 2 tubes
- apples, peeled, chopped - 2 small
- sugar - 1 cup
- cornstarch - 1 T
- lemon juice - 1 T
- cinnamon - 1 t
- nutmeg - 1/4 t
- water - 1 cup
- sea salt - pinch
- flour - 1/3 cup
- sugar - 1/3 cup
- butter, melted - 3 T
- ground cinnamon - 1 t
- water - 1/2 T
- chopped pecans - if desired
Instructions:
Prepare apple filling -- in a saucepan, combine 1 cup water, juice, 1 cup sugar, 1 t cinnamon, nutmeg and cornstarch, stirring constantly, cook on medium heat until thickened and bubbly about for 2 minutes. Add apples and sea salt, bring to a boil again. Reduce heat to medium low, simmer for 10 - 12 minutes. Cool completely.
Sprinkle a little flour over work surface. Working with 1 tube of dough at time, roll dough out. With a pizza cutter, cut dough into 6 roughly even squares. Place each dough squares into the cups of a greased mini muffin pan. Fill each cup to the top with apple mixture; set aside. Prepare streusel -- in a bowl, combine 1/3 cup sugar, 1/3 cup flour, 1 t cinnamon, 1/2 T water and pecans. With a fork, mix 3 T butter into mixture until it becomes crumbly. Sprinkle streusel over the top of apple filling in each cup.
Bake in a preheated 375 degree oven for 20 minutes, until tops are golden and a toothpick comes out clean. Leave the bites in the pan for 10 - 15 minutes, then transfer to a wire rack to continue cooling.
Store in an airtight container for up to three days. Apple pie filling can be made in advance, store covered in the refrigerator for up to 2 days.
