Sweet Potato Pie
Ingredients:
- mashed sweet potatoes - 2 cups
- cream cheese, softened - 4 ounces
- sugar - 1 cup
- half & half - 1/4 cup
- butter, melted - 4 T
- eggs, lightly beaten - 2
- vanilla extract - 1 t
- ground cinnamon - 1/ t
- pie crust - 1 - 9 inch
Instructions:
Prepare your favorite pie crust and place in a deep dish 9 inch pie pan, set aside.
In a bowl, beat sweet potatoes and cream cheese until smooth. Add sugar and half & half; beat 5 minutes, until sugar dissolves. Add butter, eggs, vanilla and cinnamon and beat until blended. Pour mixture into pie crust.
Bake on a preheated 350 degree oven for 1 hour or until filling is puffed and set around edge but center jiggles slightly. Cool on wire rack.
