Upside Down Apple Pie with Pecans
Ingredients:
- butter, melted, divided - 6 T
- packed light brown sugar - 1/2 cup
- chopped pecans - 1/2 cup
- pie crusts, your favorite recipe or store purchased - 2 crusts
- sugar - 1 cup
- flour - 1/3 cup
- ground cinnamon - 3/4 t
- baking apples, peeled, cored, sliced - 5 large
Instructions:
With cooking spray, coat a deep dish pie plate, line with wax paper. Coat wax paper with cooking spray; set aside.
In a bowl, combine 4 T butter, brown sugar and pecans; mix, spread evenly over bottom of pie plate. Place 1 pie crust in pie plate, gently press crust against nut mixture and sides of pie plate; set aside. In a bowl, combine sugar, flour, cinnamon and 2 T butter; mix well. Add apples, gently toss to coat, spread apple mixture into pie crust. Place second pie crust over apple mixture. Trim edges, fold and seal edges. Cut four 1 inch slits in top crust.
Bake in a preheated 375 degree oven for 1 - 1 1/4 hours, or until crust is golden. Immediately, loosen wax paper around rim, invert pie onto a serving plate. Remove wax paper, cool slightly; serve warm, with a scoop of ice cream.
