Apple and Zucchini Salad
Ingredients:
- apple, julienne cut - 1/2 cup
- zucchini, julienne cut - 1/2 cup
- Vinaigrette --
- olive oil - 2 T
- red wine sherry - 1 T
- sherry vinegar - 1 T
- dijon mustard - 1 T
- lemon juice - 2 T
- salt and pepper - to desired taste
Instructions:
Place apple and zucchini in a bowl, toss; set aside.
In a small bowl, whisk together vinaigrette ingredients; adjust to taste. Slowly add vinaigrette to slaw until you achieve the consistency you like; mix well. Serve immediately or place in refrigerator until cold.
