Avocado Salad
Ingredients:
- cherry tomatoes, cut in half - 1 carton
- fresh mozzarella cheese pearls, drained - 1 carton
- basil (julienned) - 1/3 cup
- fresh parsley - 2 T
- lemon juice - 1/4 cup
- olive oil - 1/4 cup
- salt and pepper - to desired taste
- avocado, peeled and diced - 1
Instructions:
In a bowl combine tomatoes, mozzarella, basil and parsley. In a small bowl whisk together lemon juice, olive oil, salt and pepper.
Pour over tomatoes, chill for 1 hour. Before serving stir in avocado.
