BLT Salad
Ingredients:
- elbow macaroni - 16 ounces
- mayonnaise - 3/4 cup
- sour cream - 1/4 cup
- rice vinegar - 3 T
- garlic powder - 1 tsp
- salt - 1 tsp
- black pepper - 1 1/2 tsp
- bacon, cooked crumbled - 8 slices
- tomato, seeded, diced - 1 cup
- roughly chopped baby spinach - 1 cup
Instructions:
Cook macaroni per package directions; drain. Rinse with cold water, drain well.
In a bowl, mix together mayonnaise, sour cream, vinegar, garlic, salt and pepper. Add macaroni, bacon, tomato and spinach, toss together until combined. Cover, store in refrigerator.
