Chicken Salad
Ingredients:
- chicken breast, cooked, shredded - 1 1/2 pounds
- diced red onion - 1/2 cup
- diced apple - 1/2 cup
- grapes, cut in half - 2/3 cup
- dried cranberries OR raisins - 1/3 cup
- sliced almonds - 1/4 cup
- Greek yogurt - 1/2 cup
- freshly squeezed lemon juice - 1 T - to desired taste
- garlic powder - 1/2 tsp
- Kosher salt - to desired taste
- fresh ground black pepper - to desired taste
Instructions:
In a large bowl, mix together chicken, onion, apple, grapes, cranberries, almonds, yogurt, lemon juice, garlic powder, salt and pepper.
Serve mixture on your favorite roll or on a bed of lettuce.
