Chicken Salad
Ingredients:
- cooked chicken breasts, cooled, cut into ½ inch cubes - 1 pound
- mayonnaise - 1 cup
- diced celery - 1 cup
- purple grapes, cut in half - 1 cup
- sliced almonds, toasted - 1/2 cup
- chopped parsley - 1 T
- Kosher salt - to desired taste
- whipped cream - 1/2 cup
- fresh ground black pepper - to desired taste
Instructions:
In a bowl mix together chicken, mayonnaise, celery, grapes, almonds, parsley and salt. Fold in whipped cream and pepper. Place in refrigerator until ready to serve.
Serve on lettuce lined salad plates.
