Corn, Avocado, Tomato with Lime Zest
Ingredients:
- cooked corn, fresh OR frozen - 2 cups
- avocado, cut into 1/2 inch cubes - 1 - 2
- cherry tomatoes, cut in half - 1 pint
- finely diced red onion - 1/2 cup
- dressing --
- olive oil - 2 T
- grated lime zest - 1/2 tsp
- fresh lime juice - 1 T
- chopped cilantro - 1/4 cup
- salt - 1/4 tsp
- pepper - 1/4 tsp
Instructions:
In a bowl, combine corn, avocado, tomatoes and onion. In a second bowl, mix dressing ingredients together, pour over the salad, gently toss to mix. Cover, place in the refrigerator for 1 -2 hours for flavors blend.
