Creamy Fruit Salad
Ingredients:
- pineapple chunks, drained - 10 ounce can
- mandarin oranges, drained - 11 ounce can
- apple, cored, chopped - 1 medium
- lemon juice - 1 tsp
- grapes, cut in half - 1 cup
- plain Greek yogurt - 1/2 cup
- sweetened coconut - 1/2 cup
- minature marshmallows - 1 cup
Instructions:
In a bowl, toss apple with lemon juice to keep apple from browning. Add pineapple, mandarin oranges, grapes, coconut and marshmallows; toss to combine. Stir in Greek yogurt, gently toss to coat.
Cover, place in refrigerator for at least 4 hours before serving, to allow the flavors blend. Serve chilled. Best served the day prepared.
